Taco Chilli

A big bowl of taco delightfulness without any of the less than healthy aspects of tacos such as tortilla, cheese, or source cream. Perfect for a voracious hiker after a freshly completed journey.

Ingredients

  • 600g Lean Ground Beef
  • 540ml Drained Black Beans (Canned)
  • 1.5 cups Chopped, Fresh Sweet Peppers
  • 1.5 cups Salsa
  • 0.5 cups Hot Pepper Rings
  • 4tsp Taco Seasoning
  • Brown ground beef in a skillet.
  • Add taco seasoning to beef and mix thoroughly.
  • Combine beef with beans, salsa, and hot pepper rings in a saucepan and simmer on medium for 5 minutes.
  • Add Sweet Peppers and simmer for 1 minute.

This recipe leaves plenty of room for adjustment. If you prefer a fiery chilli; use a spicier salsa and/or add in more potent peppers. If you would like more of a tangy flavour, add more hot pepper rings. Experiment to find the perfect blend to your taste. 

Note: This recipe is sufficient for multiple people or more than one meal unless you are really hungry. In addition, if you want to drop the sodium content, simply use a lower sodium salsa as many salsas are heavily salted.
