Garlic Vegetable Scramble

You can't go wrong with a delightful mix of eggs and veggies to fuel a hike or a cozy morning with your favourite book. Simple and nutritious, this is a breakfast that will set your day on the right track.

Ingredients

  • 4 Large Egg
  • 130g Carrots
  • 130g Broccoli
  • 130g Bell Peppers
  • 1tsp Garlic Powder
  • ½tsp Oregano
  • ½tsp Rosemary
  • ½tsp Thyme
  • Olive Oil
  • Salt/Pepper
  • Season frypan with olive oil and preheat at medium temperature.
  • Dice vegetables and mix in a bowl.
  • Pour vegetables into saucepan and cook until they are just beginning to show crisp.
  • Crack eggs into the pan on top of the vegetables.
  • Add herbs, salt, pepper, and garlic. (adjust to taste)
  • Stir consistently and cook until the eggs form a delightful scramble.

Easy Mode

If you don't have time to chop the veggies, I've got you covered. Green Giant makes a frozen vegetable blend that inspired this recipe. It contains all the veggies and herbs that you need already prepared. It is called Seasoned Italian Blend. It can be found in the freezer section of most grocers. (At least here in Canada) This makes the recipe even easier and perfect for camping! Just toss a bag in your cooler along with some eggs and you are ready for a great breakfast cooked over the fire. 

Maximize Taste

The trick to ensuring that this dish is as flavourful as possible is to make sure that you pull it from the heat before either the veggies or the eggs begin to dry out. The magic of this meal is the amazing flavour of the veggies, egg yolk, and herbs mixed together. If overcooked, all three quickly lose much of their wonderous synergy. Practice makes perfect.
